JUST AWESOME LAYERED DIP

JUST AWESOME layered DIP

INGREDIENTS

BASE LAYER
1 cup cream cheese (softened)
½ cup sour cream
¼ mayonnaise or Miracle Whip
¼ tsp salt
3 Tbsp (or to taste) of favourite Just Awesome Sauce

MIDDLE LAYER
½ red pepper, diced (about a half cup)
½ orange pepper, diced (about a half cup)
½ green pepper, diced (about a half cup)
¼ red onion, diced (about a ¼ cup)
1 lime, juiced
1 tsp salt
1 cap full apple cider vinegar (about ½ Tbsp)
2 Tbsp Just Awesome Sauce La Cura (or to taste)
1 ½ Tbsp pickled jalapenos, chopped (optional)
 
TOP LAYER
1 ½ - 2 cups shredded cheese

DIRECTIONS 
With a spatula or electric mixer, beat the softened cream cheese so it has the consistency of icing – the first time I made this Just Awesome Dip I skipped this step and my base layer was a bit lumpy.  Add mayo and sour cream, mix to combine.  Add salt and Just Awesome Sauce of your choice to taste, mix well.  I used Fuego for a nice kick of heat but you can use any of our Just Awesome Sauces.  La Cura would be great for an Awesome hit of garlic without heat; Verde would give it more of a Mexican flavour with a good amount of heat.  Once you have tasted the mix and are happy with the level of Just Awesome Sauce you’ve added, pour into a dish and spread it out evenly.
 
Next, put all the ingredients for the middle layer into a bowl and stir together to combine.  I recommend using La Cura in this layer as the onion and pickled jalapeno, if using, will give it a nice bite and the garlic flavour from La Cura is Awesome in this mix.  Feel free to add one of our spicier Just Awesome Sauces to the mix if you’d prefer more heat.  I let the mix sit while I was shredding the cheese before adding it to the dish.  This gives the acids in the lime juice and apple cider vinegar a little time to penetrate the veggies and adds to the Awesome flavour.  When adding this layer on top of your base, be sure to strain the juice.  I used a slotted spoon to scoop it out of the bowl, a little juice is fine and will add to the flavour but too much juice will make the dip runny.  Spread it out evenly across your base.
 
Finally, sprinkle your shredded cheese evenly over the top.  I used a jalapeno Monterey Jack and an old marbled cheddar shredded and then mixed together.  Havarti, mozzarella, or white cheddar would work well too.  There are lots of pre-shredded mixes out there as well if you want to save a little time.
 
I served this Just Awesome Dip with tortilla chips but you can also use crackers or bread.  Enjoy!
